The certificate emphasizes a multidisciplinary educational experience and includes hands-on experiences in vineyards and wineries as well as analytical wine tastings. Viticultural techniques explore include: how to prune vines, how to prepare a vineyard for the growing season, and practices that determine how the vineyard is managed during the year. The Global Wines Certificate of Completion is a noncredit certificate designed to train and upskill students working in the fields of wine business as a wine steward/sommelier, wholesale and retail buyer, and/or food service professional. The certificate covers wine regions, wine history, and wine laws for the wine producing countries of France, Italy, Spain and the state of California. Using sensory analysis students will calibrate the Systematic Approach to Tasting (SAT) rubric for assessment of wine including: quality, style, drinkability, potential for aging, quality for value, and market position. Upon completion, students will have a current and in depth understanding of the wine industry in each country. The certificate requires no prerequisite skills but does have an 18 years or older age requirement. Students may repeat the courses in the certificate, as needed, to update to current industry standards; however, only one Certificate of Completion will be granted per student.
